Ingredients for Orange Chicken:
Boneless chicken 2-3
Egg 1
Salt 1-1/2 tsp
White pepper to taste
Oil for frying
Corn flour 1/2 cup
Corn flour 1 tbsp
Flour 1/4 cup
Ginger, minced 1 tbsp
Garlic minced 1 tsp
Crushed red chilies 1/2 tsp
Green onion, chopped 1/4 cup
Water 1/4 cup
Sesame oil 1/2 tsp
For Orange Sauce:
Soya sauce 1-1/2 tbsp
Water 1-1/2 tbsp
Sugar 5 tbsp
Vinegar 5 tbsp
Orange juice 1 whole
Orange zest 1 whole
Method:
In chicken mix egg, salt, pepper, and oil.
Stir corn flour and flour together.
Mix flour mixture and egg mixture.
Add chicken pieces, stirring to coat.
Heat oil for deep frying.
Add chicken from oil with slotted spoon and drain on paper towels; set aside.
Heat oil and add ginger garlic and stir fry until fragrant.
Add crushed chilies, and green onions.
Make orange juice, soya sauce, water, sugar and vinegar, add orange sauce,
and bring to boil.
Add cooked chicken, stirring until well mixed.
Stir water into remaining corn flour until smooth and add to chicken.
Stir in sesame oil and oranges zest if desired.
Serve with Chinese rice.
Heat oil and sesame oil in a pan.
Saute cabbage and green onion for about 5 minutes.
Add chicken, pasta and soya sauce, fold in bean sprouts and heat through.
Ingredients for Shanghai Noodles:
Oil 3 tbsp
Sesame oil 1-2 tbsp
Shredded cabbage 2 cups
Spring onion 1/2 cup
Angel hair pasta 8 ounces
Soya sauce 2- 4 tbsp
Cooked chicken breasts 2 sliced
Bean sprouts 1 cup
Method:
Heat oil and sesame oil in a pan.
Saute cabbage and green onion for about 5 minutes.
Add chicken, pasta and soya sauce, fold in bean sprouts and heat through.
Ingredients for Almond Gelatin:
Caster sugar 2/3 cup
Milk 1-1/2 cups
Gelatin 2 tbsp
Boiling water 2 cups
Almonds essence 2 tsp
Mandarin orange segments 1 can
Method:
Whisk the sugar into the small milk in a bowl until dissolved.
Sprinkle the gelatin over the top, and let stand for 1 minute to soften,
Whisk the boiling water and almonds extract into the gelatin mixture until the gelatin has dissolved.
Pour into a 7 inch square pan.
Refrigerate until firm, about 4 hours.
Once firm, cut the gelatin into 1 inch squares, and place into a mixing bowl.
Gently stir in the mandarin oranges along with their juice to serve.
Ingredients for Chinese Steamed Fish:
Fish fillet 1/2 kg
Salt 1 tsp
Minced fresh ginger 1 tbsp
Green onions 2
Soya sauce 2 tbsp
Sesame oil 1 tbsp
Coriander sprigs few
Method:
Rub both sides of fish fillet with salt. Scatter the ginger, spring onions, soya sauce over the top of the fish.
Put in foil and stream over a streamer till done.
Heat sesame oil in a small pan until it begins to smoke.
When the oil is hot, carefully pour on top of the fish.
Garnish with coriander springs and serve immediately.
Ingredients for Chinese Rice:
Onion finely chopped 3/4 cup
Oil 2-1/2 tbsp
Egg 1
Soya sauce 2 tbsp
Sesame oil 1 tsp
Chicken breasts 2
Carrot 1/2 cup
Peas 1/2 cup
Cold cooked rice 4 cups
Green onions 4
Beans sprouts 2 cups
