Pani Puri And Sweet Corn Fried Chicken by Chef Gulzar

Ingredients For Pani Puri:

  • Boiled chick peas 1 cup
  • Yogurt 1 cups
  • Chopped onion  1
  • Chopped tomatoes  2
  • Boiled potatoes  2-3

For Gol Gappay:

  • Wheat flour  1 cup
  • Semolina  2 cups
  • Oil  to fry

For Date Chutney:

  • Dated  1 cup
  • Tomato paste  1/2 cups
  • Crushed cumin  1 tsp
  • Oil  2 tbsp
  • Brown sugar  2-3 tbsp
  • Vinegar  2-3 tbsp
  • Salt  to taste

For Sour Water:

  • Water  2 jugs
  • Tamarind paste 1 cup
  • Tartary  1 tsp
  • Black salt  1 tsp
  • Red chili  1 tbsp
  • Cumin powder  1 tbsp
  • Sonth  1 tbsp
  • Salt  to taste

Tamarind Chutney:

  • Tamarind paste  1 cup
  • Black salt  a pinch
  • Crushed cumin  1 tsp
  • Sonth  1/2 tsp
  • Jaggery  4 tbsp
  • Salt  to taste

For Sweet Chutney:

  • Ketchup  1/2 cup
  • Cumin powder  1 tsp
  • Vinegar  2 tbsp
  • Brown sugar  2 tbsp

Method:

  1. Put flour, semolina, pour oil and, sprinkle some water, knead it hard, fold it in muslin cloth and leave it.
  2. Now make the portions of big size, now bake the thin chapati, roll it out.
  3. Make its shape proper with the help of round bowl, press it from center, take it out with the help of spoon , fry them golden brown.
  4. For Chutney: Tamarind chutney, water, jaggery, sonth, chopped and crushed cumin, salt, mix it well.
  5. Now cook it it for 5 to 7 minutes, sprinkle salt, mix it well. Tamarind chutney is ready.
  6. For making sour water add water boil it tamarind paste, chopped cumin, chopped sonth, tatri, salt, black salt, cook it for 10 minutes.
  7. Now filter it and cool it, sour water is ready, For making date chutney, pour oil add dates, tomato paste, chopped and crushed cumin, brown sugar, vinegar, oil, salt, water cook it well.
  8. When chutney starts to thick, then keep it on a side, keep all the chutney together.
  9. Put potatoes, boiled peas in a one plate.
  10. Pour yogurt beat it well.
  11. Put some onions, tomato then serve.

Ingredients For Sweet Corn Fried Chicken:

  • Chicken boneless  300 gm
  • Egg white  2
  • Sweet corn  1 cup
  • Corn flour  1/2 cup
  • Garlic paste  1 tsp
  • Black pepper  1 tsp
  • Oyster sauce  2 tbsp
  • Lemon juice  2 tbsp
  • Oil  to fry
  • Salt  to taste

Method:

  1. Take a chicken, add garlic paste, black pepper, oyster sauce, lemon juice, salt mix it well, leave it for an hour.
  2. Now put eggs white, corn flour, sweet corn, water make the batter thick.
  3. Now marinate the chicken by dipping it on low temperature.
  4. In the end garnish it with salad leaves and tomatoes then serve.
