Chocolate Chip Muffins, Spicy Chicken Liver And Tuna Mousse by Zarnak Sidhwa

Ingredients For Tuna Mousse:

  • Tuna, drained 16 oz
  • Milk  300 ml
  • Flour  3 tbsp
  • Butter 2 oz
  • Eggs, separated 2
  • Cream  4 oz
  • Gelatin  2 tbsp
  • Water  1/4 cup
  • Lemon  1
  • Salt and pepper to taste
  • Mustard paste  1/2 tsp
  • Tabasco sauce  few drops
  • Ketchup  2 tbsp
  • Olives, to garnish  5-6
  • Lettuce  to garnish
  • Egg, boiled to garnish  1

Method:

  1. Melt butter, add flour stir in milk, when cool, add in yolks, add in ketchup, salt, pepper, mustard, tabasco, mix gelatin with warm water and let cool, mix in cream and all the other ingredients, lastly fold in the beaten egg whites, pour in a greased mould and let freeze till set.
  2. Unmold on a bed of lettuce and garnish with olives and boiled egg slices.

Ingredients For Spicy Chicken Liver:

  • Liver 1 kg
  • Oil 2 tbsp
  • Red chili powder 1 tsp
  • Coriander powder 1 tbsp
  • Cumin powder 1 tbsp
  • Cumin seeds 1 tsp
  • Salt  1 tsp
  • Garam masala powder  1 tsp
  • Ginger chopped 1 piece
  • Onion, sliced 1
  • Tomato, chopped  1
  • Green chilies, 4-5
  • Chopped coriander  to garnish

Method:

  1. Marinate liver for an hour with red chili powder, coriander powder, cumin powder, cumin seeds, salt, ginger garlic paste, garam masala powder, ginger chopped.
  2. Heat oil, fry sliced onions till golden and add cumin seeds and green chilies, add liver and saute, cook till done, add the tomatoes and lastly add chopped coriander and serve.

Ingredients For Chocolate Chip Muffins:

  • Flour  9 oz
  • Baking powder 2 tsp
  • Butter 2 oz
  • Caster sugar 3 oz
  • Chocolate chips 6 oz
  • Eggs  2
  • Vanilla essence 1 tsp
  • Milk  250 ml

Method:

  1. Beat butter,add caster sugar, eggs, vanilla essence, flour, baking powder, milk and fold in chocolate chips, mixture should be lumpy and fill cupcake cases bake at 200 degree C for 20 minutes and once serve warm.
