Ingredients For Fajita Steaks:

  • Undercut steak 1 kg
  • Oil  2 tsp
  • Capsicum 1
  • Onion 1
  • Garlic 3 cloves
  • Chili powder 1/2 tsp
  • Oregano 1/4 tsp
  • Pepper  1/4 tsp
  • Salsa  1 cup
  • Flour tortillas  5-6

Method:

  1. Brown steak strips in oil, drain.
  2. Add capsicum, onion, garlic, chili powder, oregano and pepper.
  3. Cook and stir for 5 minutes.
  4. Add salsa, cook for 3 more minutes.
  5. Spoon 3/4 cup down center of each tortilla.
  6. Roll over and serve.

Ingredients For Red Velvet Cup Cakes:

  • Flour 2 1/2 cup
  • Caster sugar 1 1/2 cup
  • Oil 1 1/2 cup
  • Buttermilk 1 cup
  • Eggs 2
  • Vanilla essence 1 tsp
  • Cocoa powder 2 tsp
  • Salt  1 tsp
  • Baking soda 1 tsp
  • Vinegar  1 tsp
  • Red food coloring  2 oz

For the Icing:

  • Icing sugar sifted 2 cup
  • Butter softened 1/2 cup
  • Cream cheese 8 oz
  • Vanilla essence  1 tsp

Method:

  1. In a bowl, mix all ingredients together and pour in cupcake cases lined in a cupcake tin and bake at 180 degree C for about 20 minutes.
  2. Or till a skewer inserted in centre comes out clean.
  3. For the icing, combine the icing sugar, butter, cream cheese and vanilla.
  4. Spread or pipe over the cupcakes and serve.

Ingredients For Creamed Steak:

  • Steaks 2
  • Onion 1
  • Garlic minced 2 cloves
  • Parsley flakes 1 1/2 tsp
  • Salt 1/4 tsp
  • Dried basil leaves 1 tsp
  • Dried oregano leaves 1 tsp
  • Ginger  1/2 tsp
  • Cream 1 cup
  • Parmesan cheese 1/2 cup
  • Cheddar cheese 1/2 cup
  • Mushroom 2 large
  • Pickle 2 large
  • Butter  4 tbsp

Method:

  1. Saute onion and mushrooms in butter until slightly browned.
  2. Add steak strips & salt & cook until browned.
  3. Add all the spices and mix until combined.
  4. Add the cream, pickles, parmesan cheese, and cheddar cheese & mix until combined.
  5. Turn heat down to simmer and cover.
  6. Let simmer for 10-15 minutes, until cream has reduced and sauce has thickened.
  7. Serve steak cream sauce over a bed of cooked spinach and serve with mash or a jacket potato.

Ingredients For Homemade Flour Tortillas:

  • Flour 3 cup
  • Salt 1 tsp
  • Baking powder 1 tsp
  • Oil 1/3 cup
  • Warm water  1 cup

Method:

  1. Combine all ingredients until it forms a dough.
  2. Roll into a big ball and take about 1''- 2'' pieces off.
  3. Pat flat with your hands or use a rolling pin.
  4. Put on a tawa or griddle on the stove and let the sides cook until there are little brown specks. 

Ingredients For Mash & Veggies:

  • Potatoes peeled boiled 3 large
  • Milk 1 cup
  • Cream 1/2 cup
  • Salt 1 tsp
  • Black pepper 1/2 tsp
  • Grated cheddar cheese 2 tbsp

Method:

  1. Mash the warm potatoes with milk, cream, cheese, salt, pepper and keep warm.
  2. Pipe around steak and serve with veggies.
