Caramel Pannacota by Zarnak Sidhwa

Ingredients:
- Salted caramel 1 cup
- Cream 1-1/2 cups
- Milk 1 cup
- Caster sugar 3/4 cup
- Vanilla bean paste or Vanilla essence 1 tbsp
- Powdered gelatin 1 tbsp
- Milk 1/2 cup
- Caster sugar 1/2 cup
Method:
- Place 2 tbsp salted caramel in bottom of each ramekin or glass and spread evenly. Set aside.
- Mix cream, milk, 3/4 cup sugar and vanilla in saucepan.
- Bring to boil over medium heat, stirring occasionally.
- Remove pan from heat and allow mixture to cool to room temperature.
- Sprinkle gelatin over 1/2 cup milk.
- Let sit for 5 minutes.
- Place pan back on medium heat.
- Add gelatin mixture and 1/2 cup sugar and whisk until gelatin and sugar have dissolved.
- When mixture begins to simmer, remove pan from heat.
- Divide mixture among glasses.
- Place glasses in refrigerator to chill few hours of preferably overnight.
