Pulao Biryani by Shireen Anwer

Ingredients:
- Rice 1/2 kg
- Mutton 1/2 kg
- Ginger chopped 1 tbsp
- Garlic chopped 1 tbsp
- Onion chopped 1
- Salt 1-1/2 tsp
- Mixed whole spices 1 tbsp
- Caraway seeds 1 tsp
- Bay leaf 1
- Water 3 cups
For Biryani Masala:
- All spice 1 tsp
- Brown onion 1/2 cup
- Ginger garlic 1 tbsp
- Salt 1/2 tsp
- Yogurt 1 cup
- Oil 1/2 cup
- Red chili powder 1-1/2 tsp
- Green chilies 6
- Coriander leaves 2 tbsp
- Oil 1/2 cup
- Kewra water 1 tbsp
- Yellow color 1/4 tsp
Method:
- Add mutton, ginger, garlic, onion, whole spices, salt with 3 cups water in pan and cook until mutton tender.
- Now strain stock.
- Then soak for 30 minutes.
- Now cook in stock until it is ready.
- Heat oil in pan, add onion, ginger garlic, salt, red chili powder and yogurt.
- Now put fried meat.
- Then put all spice, green chilies and coriander leaves and make layer of half rice.
- For assemble: Put half rice in pan.
- Now add meat mixture and cover with remaining rice.
- Then put kewra and yellow color and simmer it.
Shireen Anwer has made Pulao Biryani with her own recipe. It has taste of Pulao & Biryani. You can make this dish at home on Eid-ul-Adha with Mutton or Beef.
