Baigan Bharay Shami Kabab

Ingredients:
- Eggplant (long) 2
- Chicken boneless boti 1/2 cup
- Chana daal 1 cup
- Garlic 6 cloves
- Yogurt 1 tbsp
- Ginger 1
- Whole red chilies 8
- Whole mix spice few
- Whole coriander 1 tsp
- White cumin 1 tsp
- Salt to taste
- Mint leaves 1 bunch
- Coriander leaves 1 bunch
- Green chilies 3
- Finely chopped ginger 1 tbsp
- Egg whites 3
- Crumbs 1 packet
- Oil for fry
Method:
- First chop eggplant with fork and roast on stove.
- Then mash it.
- Put chicken, chana daal, ginger, garlic, salt, whole red chilies, whole mix spice, coriander and cumin in pot and boil it.
- Daal should be tendered.
- Now put yogurt and chop in chopper.
- Mix 1 egg white in mince.
- Cut coriander leaves and green chilies finely.
- Then mix in eggplant pulp.
- Now take little little mince in hands, keep little eggplant and make kabab.
- Then dip in egg whites and coat with crumbs.
- Then shallow fry it.
- When golden, take it out and serve.
Baigan Bharay Shami Kabab in new variety kabab. Eggplant pulp is stuffed in chicken & chana daal mixture and shallow fried. Serve it with sauce.
