Vegetable Soup Recipe

Ingredients:
- Chicken bones 250 gm
- Onion diced 1 medium
- Garlic 3 cloves
- Tomatoes chopped 2
- Potato diced 1
- Green peas 1 cup
- Carrots diced 2
- Cabbage shredded 1 cup
- Cauliflower florets 1 cup
- Salt 1 tsp
- Black pepper powder 1/2 tsp
- Black peppercorns 5
- Lemon juice 4 tsp
- Fresh coriander chopped 4 tbsp
- Bay leaf 1
- Clove 1
- Water 3 liters
Method:
- Put chicken bones in pot of water.
- Add clove, bay leaf and black peppercorns.
- Simmer for 45 minutes, then strain.
- Add potato and green peas and let cook for 5 minutes.
- Add garlic and cauliflower and cook for 5 minutes more.
- Now mix in salt, lemon juice, black pepper powder, tomatoes, onion and cabbage and cook for 1 minute
- Then take out in serving bowl, sprinkle fresh coriander and serve.
Vegetable Soup is healthy and very common soup in Pakistan. It is prepared with chicken bones & mix vegetables and cooked. You can prepare it with meat. You can also add some cream.
