Vegetable Soup Recipe

Ingredients:

  • Chicken bones 250 gm
  • Onion diced 1 medium
  • Garlic 3 cloves
  • Tomatoes chopped 2
  • Potato diced 1
  • Green peas 1 cup
  • Carrots diced 2
  • Cabbage shredded 1 cup
  • Cauliflower florets 1 cup
  • Salt 1 tsp
  • Black pepper powder 1/2 tsp
  • Black peppercorns 5
  • Lemon juice 4 tsp
  • Fresh coriander chopped 4 tbsp
  • Bay leaf 1
  • Clove 1
  • Water 3 liters

Method:

  1. Put chicken bones in pot of water.
  2. Add clove, bay leaf and black peppercorns.
  3. Simmer for 45 minutes, then strain.
  4. Add potato and green peas and let cook for 5 minutes.
  5. Add garlic and cauliflower and cook for 5 minutes more.
  6. Now mix in salt, lemon juice, black pepper powder, tomatoes, onion and cabbage and cook for 1 minute
  7. Then take out in serving bowl, sprinkle fresh coriander and serve.

Vegetable Soup is healthy and very common soup in Pakistan. It is prepared with chicken bones & mix vegetables and cooked. You can prepare it with meat. You can also add some cream.
