Kabab Pulao

Ingredients

  • Chicken mince 1 kg
  • Egg 1
  • Bread slices 2
  • Onion chopped 3
  • Green chilies 4
  • Green cardamoms 6
  • Yogurt ½ cup
  • Rice 2 ½ cup
  • All spice 1 tsp
  • Chili powder 1 tbsp
  • Ginger garlic paste tbsp
  • Seekh kabab Masala 2 tbsp
  • Fresh Cream 2 tbsp
  • Salt to taste
  • Whole garlic 1
  • Ginger 1 piece
  • Onion 2
  • Black cardamom 4
  • Black pepper 4
  • Fennel seeds 1 tsp
  • Whole coriander 1 tbsp
  • Salt to taste

Method

  1. In a pan put together 1 tsp fennel seeds, 1 tbsp whole coriander, 1 bunch of garlic cloves, salt to taste, 1 piece of ginger, 4 black cardamoms, 2 onion, 4 pepper and 3-4 glasses of water.
  2. Cook till stock is done.
  3. Strain the stock and keep aside.
  4. Heat oil in a pan, add in 3 chopped onions, fry till golden brown, remove half of the brown onion and keep aside.
  5. In the remaining half onion add ½ cup yogurt, 1 tbsp ginger garlic paste, sliced green chilies and 6 green cardamoms.
  6. Slightly fry and add prepared stock.
  7. Cook till mixture start boiling, now add 2 ½ cup soaked rice also add salt to taste and mix well. 
  8. Cover and cook.
  9. In chopper put 1 kg chicken mince and 2 bread slices.
  10. Chop well and remove in a bowl. 
  11. Add in 2 tbsp seekh kabab masala, 1 tbsp chili powder, 1 tsp all spice powder, salt to taste, 1 egg and 2 tbsp fresh cream. Mix well. Make seekh kabab and shallow fry till golden brown in color.
  12. Now simmer rice till done, make a layer of boiled rice in serving dish arrage fried kebab on top.
  13. Make another layer of boiled rice sprinkle brown onion on top.
  14. Spread fried rice green chilies on top  and serve with raita.

Chicken Chapli Kabab 

Ingredients

  • Chicken mince 1 kg
  • Corn meal1 cup
  • Mint leaves 1 bunch
  • Onion chopped 1
  • Eggs 3
  • Green chilies 4
  • Tomato 4
  • Cumin seeds 1 tsp
  • Whole black pepper 1 tsp
  • Crushed red pepper 1 1 tbsp
  • Pomegranate seeds 2 tbsp
  • Whole coriander 2 tbsp

Method

  1. Chop 1 kg chicken mince well.
  2. Beat 3 eggs well and fry like omelet. Keep aside.
  3. Grind together 2 tbsp whole coriander, 1 tsp black pepper and 1 tsp cumin seeds.
  4. In a bowl put together chicken mince, 2 tbsp pomegranate seeds, salt to taste, fried eggs, ground mixture of black pepper, 4 chopped tomatoes, 4 chopped green chilies,
  5. 1 chopped onion, 1 bunch of chopped mint leaves, 1 tbsp crushed red pepper and 1 cup corn meal.
  6. Mix well and keep aside for few minutes.
  7. Make pattie and fry in a frying pan with ghee or oil as required.
  8. Serve with Roghani naan.

Daal Arhar

Ingredients

  • Pigeon peas ½ cup
  • Raw mango 1 
  • Whole red chilies 4
  • Garlic cloves 4
  • Salt to taste
  • Turmeric ½ tsp
  • Butter 1 tbsp
  • Garlic 2 cloves
  • Butter 1 small packet
  • Oil 2 tbsp


Method

  1. Wash ½ cup pigeon peas with lukewarm water and boil in hot water.
  2. Grind together 4 whole red chilies, 4 cloves of garlic, with skin.
  3. Mash the boiled lentils well.
  4. Add in prepared chutney with 1 chopped raw mango, 1 tbsp butter and salt to taste.
  5. Cook well.
  6. Now in a frying pan heat 1 packet butter and 2 tbsp oil.
  7. Add in 2 cloves of chopped garlic.
  8. Fry well till golden brown.
  9. Now pour this mixture on top of lentil mixture.

Aloo Ki Sabzi

Ingredients

  • Boiled potatoes 4
  • Green chilies 3
  • Curry leaves few Tamarind pulp ½ cup
  • Turmeric 1 tsp
  • Whole coriander 1 tsp
  • Sugar 1 tsp
  • Onion seeds ½ tsp
  • Oil 2 tbsp
  • Chili powder ½ tbsp
  • Salt to taste

Method

  1. Peel and mash ½ kg boiled potatoes.
  2. Add in 3 chopped chilies, few curry leaves, ½ cup tamarind pulp, 1 tsp turmeric, 1 tsp whole coriander, 1 tsp sugar, ½ tsp onion seeds, 2 tbsp oil, ½ tbsp chili powder and salt to taste.
  3. Mix well and cook for 5 minutes. Serve hot.


Meethay Kadu Ki Sabzi

Ingredients

  • Pumpkin 250gm
  • Whole red chilies 4
  • Fenugreek seeds few
  • Oil ½ cup
  • Fennel seeds 1 tsp
  • Jaggery 1 tsp
  • Onion seeds ½ tsp
  • Tamarind pulp 2 tbsp
  • Salt to taste.

Method

  1. Heat ½ cup oil in pan, add in few fenugreek seeds and fry well.
  2. Now add in 250 gm pumpkin.
  3. Also add 1 tsp jaggery, salt to taste, 2 tbsp tamarind pulp, ½ tsp onion seeds, 4 whole red chilies and 1 tsp fennel seeds.
  4. Cook over flame till pumpkin is tender.
  5. Serve hot.
