Breakfast is considered as the only time when you can add oats in your meal, but this is not true anymore. My Grandmother used to make oatmeal cookies with her special oatmeal cookie recipe in chocolate and caramel flavor for all my cousins. She used to tell us how important it is to include oats in our diet and what benefits it hides within. Today I will share with you the healthy reasons to eat oatmeal and the oatmeal cookie recipe.

Healthy Reasons to Eat Oatmeal

Oatmeal contains a good source of fiber that helps in reducing the risk of heart diseases and cancer. Not only fiber but oatmeal contains minerals, vitamins and antioxidants too. As oatmeal consumption slows down the digestive system of your body you feel less hungry and in turn eat a reduced amount, this result in weight loss. So the people on diet can include this high fiber oatmeal in their routine. Besides this the people suffering from constipation can get relief by oatmeal intake. You can add lots of fruit, honey, nuts and milk to make your oatmeal taste yummy and healthier.

Now comes the turn of the yummy oatmeal cookie recipe. You can enjoy this at home as it’s very easy and makes about 30 to 40 normal sized cookies for you to enjoy with your family.

Baked Oatmeal Cookie Recipe

Ingredients:

  • Oats – 3 cups
  • Flour - ¾ cup
  • White sugar – 1 cup
  • Egg – 1
  • Chopped & roasted nuts (your choice) – 1 cup
  • Chocolate chips – 1 cup
  • Raisins – 1 cup
  • Butter (softened) – ¾ cup
  • Vanilla essence – 1 tsp
  • Salt – ½ tsp
  • Baking Soda – ½ tsp
  • Cinnamon powder (optional) – ½ tsp

Method:

Take baking trays and spray them with oil to avoid the batter sticking on them or instead you can place the baking sheets on the trays. Once that is done preheat the oven to 350 degrees.

In a small bowl whisk flour, salt, cinnamon powder and baking soda and keep it aside for later use.

Now take a large bowl and beat butter in it for a few seconds on a medium speed of your mixer (use hand mixer or electronic, depending on the availability) now add sugar in the bowl and beat till the mixture turns creamy. Add and beat one egg along with the vanilla essence to smoothen the mixture. Next step is to add the whisked small bowl combination in the large bowl creamy mixture and beat till it’s well integrated. Add raisins, nuts, oats and chocolate chips in the bowl and stir it slowly.
Take a spoon to place the batter on the baking tray with suitable distance between them. With your oily or wet hands press down the cookies to give them shape and required thickness (0.5 cm).

The cookies are ready to be baked in a preheat oven for about 15 min. let them cool for some time before removing them from the tray to avoid breakage.  If the cookies are too soft this means you have made some wrong measurements or the oven temperature was not set so avoid such mistakes and remember you can always check the cookies by pressing them in the middle and if they are not well spread you can assert a little pressure to give them proper shape.
