Corn Fritters

Ingredients:
- Eggs 2
- Corn, whole kernal style 1 2/3 c
- Flour, all purpose 1 1/4 c
- Baking powder 1 ts
- Salt 1 1/2 ts
Method:
- Beat eggs and stir in corn. Sift flour, measure and sift again with baking powder and salt.
- Combine beaten eggs and corn with flour mixture. Drop by teaspoonfuls into deep fryer and fry until golden brown.
- Drain on paper towel.
- Serve with butter, syrup or jelly.
