Ingredients:
- 1 kg basmati rice
- 3 cups pineapple, chopped
- 2 pieces cinnamon sticks
- 4 cardamoms
- 2 cloves
- 1/4 cup raisins
- ¼ cup pistachio, sliced
- ½ cup khoya
- 1 cup ghee
- 2 cups sugar
- Food color (a pinch)
Method:
- Boil 16 cups of water with food color.
- Add rice to boiling water.
- When the rice is parboiled, drain.
- Spread it on a big tray and let it cool.
- Cook together sugar with ½ cup of water, cardamom, cinnamon and cloves in a saucepan.
- When sugar melts, add pineapple and ghee.
- Cook for seven minutes.
- Add boiled rice and cook it until water dries.
- Spread the rice in an ovenproof dish and place it in an oven at low heat for 15 minutes.
- Garnish with khoya, raisins, pistachio and almond.
