Tomato Relish

Ingredients:

  • 15ml olive oil
  • 1 onion, chopped
  • 1 garlic clove, crushed
  • 25g flour
  • 30ml tomato ketchup
  • 300ml passata
  • 5ml sugar
  • 15ml chopped fresh parsley

Method:

  1. Heat the oil in a pan.
  2. Add the onion and garlic clove and sauté for 5 minutes.
  3. Add the flour and cook for 1 minute.
  4. Stir in the tomato ketchup, passata, sugar and fresh parsley.
  5. Bring to the boil.
  6. Chill and use as required.

It has a concentrated tomato flavor.
