Velvet Cherry Pancakes

Ingredients:

  • 8 Simple Pancakes
  • 200 gm soft cheese
  • 425 gm can cherries with juice
  • 30 ml water
  • 15 ml lemon juice

Method:

  1. Make the pancakes. Spread each with a little of the soft cheese and fold into quarters.
  2. Turn the cherries and juice into the pan (skillet) and add the water and lemon juice. Heat until bubbling, stirring all the time.
  3. Add one pancake, bathe in sauce and push to one side of the pan before adding the next.
  4. Pour out into a plate and serve straight away.

The perfect breakfast for all those special occasions ready in under 20 minutes.
