Sinful Chocolate Pudding

Ingredients:

  • 175 gm butter
  • 150 gm light brown sugar
  • 1 tsp vanilla essence
  • 3 eggs
  • 3 tbsp cocoa (unsweetened chocolate) powder
  • 25 gm potato flour
  • 100 gm self-raising flour
  • 75 gm plain chocolate, coarsely grated

Method:

  1. Grease a pudding pan with some butter.
  2. In a bowl, beat the remaining butter with the sugar and vanilla essence with an electric beater until light and fluffy.
  3. Slowly beat in the eggs; beat well after each addition. In another bowl, sift the cocoa, potato flour and self-raising flour over the surface and fold it in the butter and sugar mixture with a metal spoon.
  4. Fold in the chocolate. Turn into the prepared baking pan.
  5. Cover with a double thickness of greased foil or greaseproof (waxed) paper and steam for 1.5 hours.
  6. Serve hot.

Sinfully delicious chocolate pudding.
