Sinful Chocolate Pudding

Ingredients:
- 175 gm butter
- 150 gm light brown sugar
- 1 tsp vanilla essence
- 3 eggs
- 3 tbsp cocoa (unsweetened chocolate) powder
- 25 gm potato flour
- 100 gm self-raising flour
- 75 gm plain chocolate, coarsely grated
Method:
- Grease a pudding pan with some butter.
- In a bowl, beat the remaining butter with the sugar and vanilla essence with an electric beater until light and fluffy.
- Slowly beat in the eggs; beat well after each addition. In another bowl, sift the cocoa, potato flour and self-raising flour over the surface and fold it in the butter and sugar mixture with a metal spoon.
- Fold in the chocolate. Turn into the prepared baking pan.
- Cover with a double thickness of greased foil or greaseproof (waxed) paper and steam for 1.5 hours.
- Serve hot.
