Beef Stock

Ingredients:

  • 1.5 lb shin of beef, cubed
  • 2 onions, chopped
  • 2-3 carrots, chopped
  • 2 celery sticks, roughly chopped
  • 1 bay leaf
  • 1 bouquet garni
  • 4-6 peppercorns
  • 3 pints water

Method:

  1. Place all the ingredients in a large saucepan.
  2. Slowly bring to the boil, and immediately reduce the heat to a slow simmer.
  3. Cover with a well-fitting lid and simmer for 4 hours, removing any scum from the surface.
