Beef Stock

Ingredients:
- 1.5 lb shin of beef, cubed
- 2 onions, chopped
- 2-3 carrots, chopped
- 2 celery sticks, roughly chopped
- 1 bay leaf
- 1 bouquet garni
- 4-6 peppercorns
- 3 pints water
Method:
- Place all the ingredients in a large saucepan.
- Slowly bring to the boil, and immediately reduce the heat to a slow simmer.
- Cover with a well-fitting lid and simmer for 4 hours, removing any scum from the surface.
