Lamb Cutlets

Ingredients:

  • 1/2 cup barbecue sauce
  • 1/4 cup red wine
  • 1 tbsp chopped fresh rosemary
  • 1 onion, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 12 lamb cutlets
  • parsley, to garnish

Method:

  1. Combine the barbecue sauce, wine, rosemary, onion and garlic in a non-metallic dish and add the cutlets.
  2. Cover and refrigerate overnight.
  3. Grill or dry the cutlets over medium heat for 10 minutes for medium-rare, or until cooked to your liking, basting with marinade, including the onion.
  4. Season with pepper, and garnish with parsley.
