Fried Dumplings stuffed with Red Bean Mash

Ingredients:

  • 300g glutinous rice flour
  • 450g red bean mash
  • 113g brown sugar, grated
  • 75g white sesame seeds (washed and dried)
  • 1/2 tbsp lard, or peanut oil
  • 1 cup water

Method:

  1. Put glutinous rice flour in a deep tray. Bring water and brown sugar to the boil. Fold into glutinous rice flour.
  2. Stir well. Cover for a while. Then add oil. Knead into dough. Knead into long strips. Dice. Coat with sesame seed. Work into ball shape and press flat.
  3. Put in a suitable amount of red bean mash. Fold up and seal firmly. Heat 1/2 wok of oil. Lower heat. Add dumplings.
  4. Deep fry until they float on the surface.
  5. Then turn to medium heat. Deep fry until golden. Dish up. Use oil absorbing paper to absorb excess oil.
