7-Up Citrus Salad

Ingredients:
- 2 large oranges - peeled and segmented
- 1 large grapefruit - peeled and segmented
- 1/4 cup sugar
- 1/4 cup orange marmalade
- 1/2 cup white grape juice
- 1/4 cup 7-Up
- 2 Tablespoons slivered almonds - toasted
- 2 Tablespoons flaked coconut - toasted
- Place orange and grapefruit pieces in a large bowl.
Method:
- In a pan, combine sugar and marmalade and cook until sugar are dissolved - stirring frequently. After the sugar is melted, turn off the heat and add the soda and grape juice.
- Pour this mixture over the citrus segments in the bowl.
- Cover and refrigerate overnight.
- When serving, distribute the fruit to four bowls.
- Garnish each serving generously with toasted coconut and toasted almond slivers.
