After the holidays Salad

Ingredients:
- 2 cups cooked chicken, diced
- 1 cup pineapple, chunks well drained
- 1 cup celery, diced
- 1/2 cup green onions, sliced
- 1/4 cup peanuts, roasted
- 1 cup green peppers, diced
- 2/3 cup mayonnaise
- 1 tablespoon lime juice
- 1/2 teaspoon curry powder
- 1/4 teaspoon salt
- 1 lettuce leaves, optional
Method:
- In a bowl, mix together chicken, pineapple, celery, onions, peanuts and green pepper.
- In another bowl, combine all remaining ingredients except lettuce.
- Pour over chicken mixture and mix gently.
- Chill. Serve on a bed of lettuce, if desired
