Lemon Garlic Shrimp

Ingredients:

  • 1 lb. Shrimp peeled, deveined and cooked
  • Juice and zest of two lemons
  • 1 Tbsp. chopped fresh garlic
  • 1/2 cup chopped finely parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup extra virgin olive oil
  • Garnish: lemon zest, lemon slices, chopped fresh parsley

Method:

  1. In a bowl, whisk together lemon zest, juice, garlic, parsley, salt, pepper and extra virgin olive oil.
  2. Add the shrimp, toss to mix well.
  3. Refrigerate for 1 hour
  4. Garnish with lemon zest and parsley and serve.
