Coconut Orange Cupcakes

Ingredients:
- 1 cup Sugar
- 2/3 cup Vegetable oil
- 2 Eggs
- 1 cup Orange juice
- 3 cups flour
- 1 Tbsp Baking powder
- 1 tsp Baking soda
- 3/4 tsp Salt
- 11 ounce can oranges, drained
- 1 cup Vanilla or white chips
TOPPING:
- 1 cup Flaked coconut
- 1/3 cup Sugar
- 2 Tbsp Butter, melted
Method:
- Mix the sugar, oil, eggs and orange juice in a mixing bowl well.
- In another bowl, combine dry ingredients; and stir into orange juice mixture until just moistened.
- Fold in oranges and chips. Fill muffin cups two-thirds full.
- In a bowl, combine topping ingredients; and sprinkle over cupcakes.
- Bake at 375 degrees F for 15-20 minutes or until golden brown.
- Serve warm or cold.
