Coconut Orange Cupcakes

Ingredients:

  • 1 cup Sugar
  • 2/3 cup Vegetable oil
  • 2 Eggs
  • 1 cup Orange juice
  • 3 cups flour
  • 1 Tbsp Baking powder
  • 1 tsp Baking soda
  • 3/4 tsp Salt
  • 11 ounce can oranges, drained
  • 1 cup Vanilla or white chips

TOPPING:   

  • 1 cup Flaked coconut
  • 1/3 cup Sugar
  • 2 Tbsp Butter, melted

Method:

  1. Mix the sugar, oil, eggs and orange juice in a mixing bowl well.
  2. In another bowl, combine dry ingredients; and stir into orange juice mixture until just moistened.
  3. Fold in oranges and chips. Fill muffin cups two-thirds full.
  4. In a bowl, combine topping ingredients; and sprinkle over cupcakes.
  5. Bake at 375 degrees F for 15-20 minutes or until golden brown.
  6. Serve warm or cold.
