Herbed Tuna Sandwiches

Ingredients:

  • 12 ounces canned tuna, drained and flaked
  • 2 hard-cooked eggs, chopped
  • 1/3 cup fat-free mayonnaise
  • 1/4 cup minced chives
  • 2 teaspoons minced fresh parsley
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon onion powder
  • 8 slices whole wheat bread, toasted
  • 1/2 cup shredded cheddar cheese

Method:

  1. Combine the tuna, eggs, mayonnaise, chives, basil and onion powder in a bowl..
  2. Place four slices of toast on an ungreased baking sheet; top with tuna mixture and sprinkle with cheese.
  3. Broil 3-4 in. from the heat for 1-2 minutes.
  4. Top with remaining toast.
  5. Serve hot.
