Carrot Casserole

Ingredients:
- 1 ½ pounds carrots
- 1 cup mayonnaise
- 1 tablespoon grated onion
- 1 tablespoon horseradish
- 1/4 cup cheddar cheese, shredded
- 2 tablespoons buttered bread crumbs
Method:
- In a saucepan; put 1 in. of water and add carrots. Bring it to a boil then reduce heat; cover and simmer for 7-9 minutes.
- Drain the carrots, reserving 1/4 cup cooking liquid.
- Then transfer carrots in a baking dish.
- In a bowl, mix together the mayonnaise, onion, horseradish and reserved cooking liquid; then spread evenly over carrots.
- Sprinkle with cheese; top with bread crumbs.
- Bake, uncovered, at 350° for 30 minutes.
- Serve hot.
