Onion Bisque

Ingredients:
- 2 cups chopped onion
- 1 clove garlic, minced
- 1/2 cup chopped carrot
- 1/4 cup butter
- 1/2 cup half-and-half
- Salt and pepper
- Chopped parsley
- 2 cups diced potatoes
- 2 cans Swanson chicken broth
Method:
- In a pot sauté onion, garlic and carrot with butter.
- Add broth and potatoes. Simmer until potatoes are tender.
- Reduce it to pulp in a blender and then return it to heat.
- Then, take it off from heat and stir in cream.
- Add salt, pepper and garnish with parsley.
Great looking bisque with garlic flavor
