Spicy Shrimp Curry And Chicken Dil Pasand by Chef Mehboob

Ingredients for Chicken Dil Pasand:

  • Chicken 1 kg
  • Saffron 1/4 tsp
  • Milk 1/2 cup
  • Cream 100 gm
  • Yogurt 250 gm
  • Nutmeg Mace 1 pinch
  • Clove 4
  • Cardamom 2
  • Bay Leaf 2
  • Black Pepper 8
  • Cinnamon 2 inch
  • Ginger 2 inch
  • Ghee 1/2 cup
  • Onion 250 gm
  • Red Chilli Powder 1-1/2 tbsp
  • Salt As Taste
  • Kewra Essence 1/4 tsp
  • Silver Paper for garnish
  • Peanut 4 tbsp
  • Cashew nut 4 tbsp
  • Almond 4 tbsp

Method:

  1. Put chicken in a bowl, add yogurt and marinate it for one hour.
  2. Dissolve saffron into hot milk.
  3. Put peanut, cashew nut and almond in a pan, boil it.
  4. Take out the almonds, remove skin from almonds, put it again in pan and boil it.
  5. Put ghee in pan, melt it, add onions and ginger and fry it till i becomes golden.
  6. Grind almond, cashew nut and peanut.
  7. Grind all spices and make a powder.
  8. Put chicken in the mixture of ghee, onions and ginger and fry it on high flame until its water becomes dry. Add salt in it.
  9. Add paste of almond, cashew nut and peanut, powder of spices, mix it. Cover it and cook for 15-20 minutes.
  10. Now add saffron milk and cook it until it cooks completely and gravy becomes thick.
  11. Take out in serving dish. Sprinkle kewra essence. Garnish with silver paper and serve it.


Ingredients for Spicy Shrimp Curry:
  • Shrimp 1 kg
  • Salt As Taste
  • Coconut Milk 700 ml
  • Crushed Red Chilli 1 tbsp
  • Crushed Black Pepper 1 tbsp
  • Fresh Lemon Juice 1/4 cup
  • Cooking Oil 6 tbsp
  • Curry Patta Few
  • Whole Red Chilli 8
  • Ginger 1-1/2 inch
  • Crushed Garlic 2 tbsp
  • Onion 2
  • Crushed Coriander 4 tsp
  • Turmeric Curry Powder 1 tsp
  • Tomato 700 gram
  • Coriander 1 cup

Method:

  1. In one bowl, add prawn, salt, black pepper, crushed red chilli an lemon juice, mix it and keep in refrigerator for half an hour.
  2. Heat oil in sauce pan, add curry patta and whole red chilli and fry it.
  3. Now add ginger, garlic, onion and salt and cook it till it become brown.
  4. Add turmeric, coriander and curry powder and cook it 1-2 minutes.
  5. Stir it with spoon, do slow and high flame and cook more for 5 minutes.
  6. Add coconut milk and cook it until it boils. Then add masala prawn, cook it for 2 minutes until prawns been cooked.
  7. Put crushed coriander and serve it with steam rice.
