Nauratan Biryani, Lucknowi Kabab And Special Raita by Sara Riaz

Ingredients for Nauratan Birayni:

  • Tomato 4 pieces
  • Onion 2 pieces
  • Small Fengreek 6 bunch
  • Green Chilli 10-12 pieces
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Potato 1/2 kg
  • Green Peas 250 gram
  • French Beans 250 gram
  • Soya 1/2 bunch
  • Carrot 1 cup
  • Spinach 1/2 kg
  • Cauliflower 250 gram
  • Mix Spices 1 tbsp
  • Rice 1/2 kg
  • Salt to taste
  • Red Chilli 1 tbsp
  • Turmeric Powder 1/2 tsp
  • Coriander 1 tbsp
  • Cumin Powder 1 tsp
  • Mix Spices Powder 1 tsp
  • Milk 1/4 cup
  • Screwpine(kewra) 1 tsp
  • Yellow Color pinch
  • Coriander 1/2 bunch

Method:

  1. In hot oil, fry onion slices. Then add fengreek, soya, tomato, ginger, garlic, salt, red chilli, turmeric powder, coriander, mix spices in it and parch it.
  2. Now add potato, pea, carrot, spinach, cauliflower and green chilli, mix it. Then add half cup water and cook well.
  3. Soak rice for half an hour. Then add salt and mix spices powder, mortar rice 3 times.
  4. In one pan, put half boil rice. Add vegetables mixture, coriander leaves and rice on top.
  5. Add yellow color and some oil on top of milk and leave it for simmer. 

Ingredients for Lucknowi Kabab:

  • Mince 1/2 kg
  • Corinader Seeds 1 tbsp
  • Cumin Seeds 1 tbsp
  • Small Cardamom 4 pieces
  • Black Pepper 6 pieces
  • Cloves 6 pieces
  • Cinnamon 1 inch piece
  • Nutmeg 1/8 pieces
  • Mace 2 cloves
  • Onion 1 piece
  • Gram Flour 1 tbsp
  • Yogurt 1 tbsp
  • Paw Papaya 1 tbsp
  • Ginger Paste 1 tsp
  • Red Chilli 1 tsp
  • Salt 1 tsp

Method:

  1. Parch coriander seeds, cumin seed and whole spices, grind it.
  2. Chop onions.
  3. Add onion, grinded masala, parch gram flour, yogurt, paw payaya, ginger, salt and red chilli, mix it and leave for one hour.
  4. Spread oil on your hands, make kabab of mixture and shallow fry it.

Ingredients for Special Raita:

  • Yogurt 1/2 kg
  • Cucumber 1 peices
  • Salt to taste
  • Tomato 1 pieces
  • Onion 1 pieces
  • Coriander 2 tbsp
  • Green Chilli 4-6 pieces
  • Sugar 1 tsp
  • Cumin Seeds 1 tsp

Method:

  1. Beat salt, sugar and cumin seeds with yogurt.
  2. Cut onion, tomato, coriander, cucumber and add in yogurt.
  3. Cool and serve it.
