Sweet Potato Chicken, Pineapple Patty Pan And Raisin Rolls by Chef Zakir

Ingredients for Pineapple Patty Pan:

  • Flour 250 grams
  • Icing sugar 2 tbsp
  • White butter 100 grams
  • Egg yolk 1
  • Water 1-2 tbsp

Stuffing ingredients:

  • Icing sugar 2 tbsp
  • Fresh cream 2 tbsp
  • Egg 1
  • Pineapple rings chopped 2
  • Chopped pistachios 20 grams

Method:

  1. First grease baking tray of round holes with butter.
  2. Now in one bowl, add flour, icing sugar and white butter and mix it nicely.
  3. Now add, egg yolk and water, knead it nicely and cover it with plastic.
  4. After 10 to 15 minutes, make small small balls, squeeze like roti and put them into holes of baking tray. Push it under with hands.
  5. Now make mark it the center with folk.
  6. Now bake it for 5-6 minutes. Then take it out and keep aside.
  7. Now in separate bowl, mix icing sugar, fresh cream, eggs, pineapple rings chopped. Now fill in holes of baking tray.
  8. Sprinkle with chopped pistachios on top, bake it for 8 to 10 minutes in 200 degrees C. Delicious pineapple patty pan is ready.

Ingredients for Raisin Rolls:

  • Egg yolk 1
  • Like warm milk 200 ml
  • Flour 300 gram
  • Desiccated coconut 1 tbsp
  • Yeast 1 tbsp
  • Caster sugar 2 tbsp
  • Butter 3 tbsp

Ingredients for Filling:

  • Egg white 1
  • Desiccated coconut 1 cup
  • Chopped raisin 100 gram
  • Castor sugar 2 tbsp
  • Butter 4 tbsp
  • Lemon skin 1/2 tsp

Method:

  1. In one bowl, add yeast, caster sugar and lukewarm milk, mix it and leave for 4 to 5 minutes.
  2. Then add flour, butter, egg yolk, mix it nicely, make dough, cover it with plastic and leave it.
  3. Now in bowl, mix desiccated coconut, egg white, lemon skin, caster sugar and chopped raisin.
  4. Now make medium balls of dough, squeeze it like roti. Remember, not squeeze thin.
  5. Now in the center of it, fill it with filling ingredients, grease edges with little water and fold it like roll.
  6. When all roll is ready, put it in grease baking tray, bake it for 15 to 20 minutes for 190 degrees C.
  7. When it becomes golden, take out and serve it.

Ingredients for Sweet Potato Chicken:

  • Sweet potato 1/2 kg
  • Chicken mince 250 gram
  • Spring onion 1
  • Onion chopped 1
  • Egg 2
  • Green chillies 3-4
  • Coriander leaves 1/4 bunch
  • Chilli powder 1 tsp
  • Garlic ginger paste 1 tbsp
  • Butter 1 tbsp
  • Lemon skin 1/2 tsp
  • Turmeric 1/2 tsp
  • All spice 1/2 tsp
  • Flour 3 tbsp
  • Sesame seeds 3 tbsp
  • Oil 3-4 tbsp
  • Salt to taste

Method:

  1. First mash sweet potato.
  2. Now add sweet potato, butter, spring onion, sesame seeds and flour in one bowl, mix it nicely and keep aside.
  3. Now add chicken mince, ginger garlic paste, lemon skin, onion chopped, chilli powder, turmeric, all spice and coriander leaves in chopper and grind it nicely.
  4. Now beat eggs and keep in one bowl.
  5. Now make different small kabab shapes of mince and sweet potato. Now join both kabab together.
  6. When all kabab is ready, then dip them into eggs and shallow fry on hot oil.
