Mutton Rampuri Biryani And Muzzafir by Sara Riaz

Ingredients for Mutton Rampuri Biryani:

  • Mutton 1 kg
  • Sela Rice 750 gram
  • Fried Onion 1 cup
  • Yogurt 250 gram
  • Ginger 1 tsp
  • Garlic 1 tbsp
  • Salt To taste
  • Red Chilli 1 tbsp
  • Nutmeg, Mace 1/2 tsp
  • Small Cardamom 1/2 tsp
  • Screwine (Kewra) 1 tsp
  • Mix Spices Powder 1 tsp
  • Mix Spices 1 tbsp
  • Star Anise 1 piece
  • Bay Leaf 2 pieces

Method:

  1. Coat mutton with yogurt, ginger, garlic & salt and leave it for 1 hour.
  2. Do onion brown in heat oil, take out and crumb it.
  3. Now add marinated mutton, red chilli & mix spices and cook it.
  4. When mutton cooked well,  add onion and parch it.
  5. Add together nutmeg, mace and small cardamom.
  6. Soak water for 1 hour.
  7. Now add salt & mix spices powder and boil it 3 times.
  8. Make layer of rice over mutton and leave it for simmer.
  9. When ready, serve it.

Ingredients for Muzzafir:

  • Vermicelli 1 cup
  • Ghee 250 gram
  • Fresh Milk 1/2 liter
  • Milk Powder 1 cup
  • Sugar 250 gram
  • Saffron 1/2 tsp
  • Cardamom 4-6 pieces
  • Chopped Almonds 2 tbsp
  • Chopped Pistachio 2 tbsp
  • Lemon 1 piece
  • Zarda Color 1 pinch
  • Silver Paper 1 piece

Method:

  1. Heat oil and parch cardamom, saffron & vermicelli.
  2. Put sugar, fresh milk, milk powder, zarda color and lemon.
  3. Add parched vermicelli in mixture of milk and shake it. When milk becomes dry, simmer it on low flame.
  4. Garnish with silver paper, chopped almonds & chopped pistachio and serve it.
