Praline Cheese Cake

Ingredients for Base:

  • Sponge cake of 2 eggs As required

Ingredients for Filling:

  • Curd cheese 8 ounces
  • Cream cheese 4 ounces
  • Eggs 2 separated
  • Caster sugar 4 ounces
  • Gelatin 2 tbsp
  • Lemon juice 2 tbsp
  • Caramel essence 1/2 tsp
  • Fresh cream whipped 1 1/2 cup

Ingredients to make Praline:

  • Sugar 1 cup
  • Almonds 1/2 cup

Method for Praline:

  1. Heat sugar in a sauce pan on a low flame until it melts.
  2. Add almonds and cook for another 1 minute, pour on a well greased tray.
  3. Allow to cool and crush praline.

Method for Filling:

  1. Separate eggs. Cook egg yolks and 2 ounces of caster sugar for 1 minute on a low flame. Add dissolved gelatin and keep aside.
  2. In a separate bowl, beat curd cheese, cream cheese with remaining caster sugar. Add lemon juice, the yolk and gelatin mixture.
  3. In a separate bowl, beat egg whites till stiff adding in 2 ounces of caster sugar.
  4. Now fold the whipped cream into the cheese mixture.
  5. Lastly fold in the egg whites with 1/2 cup crushed praline, pour this mixture onto the sponge cake, chill until firm.
  6. Remove and spread with remaining praline, decorate with whipped cream.

Grill Thrill

Ingredients Chicken and Beef Boti:

  • Chicken boneless 2 breast
  • Undercut boneless 8 ounces
  • Salt 1 tsp leveled
  • All spice 1 tsp
  • Chilli powder 1 1/2 tsp
  • Ginger garlic paste 1 tsp
  • Yogurt 4 tbsp
  • Pinch of orange color 1 pinch
  • Raw papaya ground 1 tsp

Ingredients for Seekh Kabab:

  • Mince 8 ounce
  • Coriander seeds crushed 1 tsp
  • Onion 1 raw ground
  • Coriander leaves finely chopped 1 tbsp
  • Chilli powder 1 tsp
  • Ginger garlic paste 1 tsp
  • All spice 1/2 tsp
  • Salt 1/2 tsp
  • White cumin crushed 1/2 tsp
  • Green chillies finely chopped 2

Method for Seekh Kabab:

  1. Marinate mince with coriander seeds crushed, onion, green chillies, coriander leaves, chilli powder, ginger garlic paste, all spice, alt and white cumin.
  2. Leave aside for 30 minutes and shape into seekh kababs, grill for 5 minutes, give smoke of coal and keep aside.

Method for Chicken and Beef Boti:

  1. Marinate chicken and beef boti with salt, all spice, ginger garlic paste. chilli powder, raw papaya, yogurt and orange color.
  2. Leave aside for 30 minutes, BBQ or grill botis and give smoke of coal.

To Serve:

  1. In a serving platter, put 6 to 8 pieces of chicken, 6 to 8 pieces of beef and 2 seekh kababs, serve it with 2 onion and 2 capsicum wedges (pan fried in 1 tbsp oil).
  2. Serve grill thrill with salad, raita and nan.
