Crab Stuffed Jalapenos

Ingredients:

  • 1 lb crabmeat
  • 1 lb Jalapeno peppers
  • 2 tbsp Green pepper; finely chopped
  • 2 tbsp Onions; finely chopped
  • 1/4 cup crushed crackers
  • 1 Egg; beaten
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1/8 tsp Cayenne pepper
  • 1 Clove garlic; minced
  • 1/4 cup Milk

BREADING MIXTURE:

  • 2 cup crushed crackers
  • 1 cup Milk
  • 2 Eggs
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Method:

  1. Cut peppers in half lengthwise. Discard pulp and seeds.
  2. In a bowl, combine remaining ingredients except breading mixture.
  3. Stuff pepper halves with crab mixture and press stuffing around pepper. Set peppers aside.

To prepare Breading Mixture:

  1. place crushed crackers in a flat pan.
  2. In a separate bowl, mix together milk, eggs and salt and pepper.
  3. Dip peppers in egg mixture, then in cracker meal.
  4. Deep fry until golden brown.
  5. Serve warm.
