Raspberry Mint Honey

Ingredients:
- 4 cups honey
- 2 cups canned red raspberries, drained
- 4 ounces fresh mint leaves
Method:
- Combine honey, raspberries and mint leaves in a pan over medium heat.
- Stir mixture occasionally until honey simmers, about 5 minutes. Then let it simmer for about 20 minutes.
- Pour the mixture through a fine strainer and discard pulp and mint leaves.
- Cool and serve
- Can be served with scones, crumpets or muffins
