Pista Kheer, Chelo Kabab And Chicken BBQ Salad by Rida Aftab

Ingredients for Pista Kheer:

  • Milk 1 liter
  • Boiled rice 1/2 cup
  • Banana custard powder 2 tbsp
  • Pistachio 1 cup
  • Sugar 1 cup
  • Cardamom powder 1/4 cup
  • Condense powder 1 cup
  • Silver paper 1

Method:

  1. Keep milk for cook on stove.
  2. When boil, add boiled rice and banana custard powder.
  3. Together add cardamom powder & sugar and cook until thick. Now add chopped pistachio & condensed milk, off the stove, cool it, decorate with silver paper and serve it.

Ingredients for Chelo Kabab:

  • Mince 1/2 kg
  • Onions 2
  • Rice flour 1/2 cup
  • Black pepper 1 tbsp
  • Red chilli 1 tbsp
  • Green chillies 6
  • Ginger garlic paste 1 tbsp
  • Egg 1
  • Salt 1 tsp
  • Oil as required
  • Olive oil 1 tbsp
  • Lard 250 gram
  • Cumin 1 tsp

For Butter Rice:

  • Boiled rice 1/2 kg
  • Butter 100 grams
  • Salt 1/2 tsp
  • Black pepper 1 tsp
  • Tomatoes 4
  • Garlic 4 cloves

Method:

  1. Add mince, onions, olive oil, black pepper, cumin, lard, salt, green chillies. ginger garlic paste & red chilli in chopper and grind it.
  2. Now take out, add rice flour & egg and make kabab in long.
  3. Heat oil in one fry pan and fry it.
  4. For butter rice: First add salt & black pepper in boiled rice and cook it.
  5. Then cut garlic into 4 long pieces, make hole in tomatoes, add garlic pieces in holes of tomatoes and roast it on tawa.
  6. In end, take out one dish of boiled rice, put butter & kabab on top, together put tomatoes and serve it.

Ingredients for Chicken BBQ Salad:

  • Boneless chicken 250 grams
  • Boiled chickpeas 1 cup
  • Boiled macroni 1 cup
  • Boiled corns 1 cup
  • Capsicum 1
  • Tomato 1
  • Red chilli powder 1 tsp
  • Ground cumin 1 tsp
  • Garlic paste 1 tsp
  • Black pepper 1 tsp
  • Chat masala 1/2 tsp
  • Salt 1/2 tsp
  • Oil 1 tbsp
  • Lemon juice 2 tbsp
  • Tomato ketchup 2 tbsp
  • BBQ sauce 4 tbsp

Method:

  1. Marinate boneless chicken with garlic paste, red chilli powder, salt, ground cumin & bbq sauce and leave it for 30 minutes.
  2. Now heat oil in one frying pan, fry chicken and keep aside.
  3. Cut carrot, capsicum & tomato into square, mix with boiled chickpeas, fried chicken, boiled corns, boiled macaroni, black pepper, chat masala, salt, lemon juice, tomato ketchup in one bowl and serve chicken bbq salad.
