Ingredients for Besan Ki Nan Khatai:

  • Gram Flour 250 gram
  • Flour 250 gram
  • Ghee 1/2 kg
  • Caster Sugar 1/2 kg
  • Yogurt 1/4 cup
  • Baking Powder 1/4 tsp
  • Baking Soda 1/4 tsp
  • Almonds 25-25

Method:

  1. Mix flour and gram flour. Then add beaten yogurt & caster sugar in it.
  2. Filter baking powder & baking soda in flour. Then add ghee and mix it.
  3. Now make balls and push in center. Put almonds on top.
  4. Bake on 180 degrees C for 20 to 25 minutes or bake in stone oven.

Ingredients for Ghuncha Bahar:

  • Cauliflower 1
  • Salt to taste
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Red Chilli 1 tsp
  • Turmeric Powder 1 tsp
  • Cumin Powder 1/2 tsp
  • Lemon Juice 2 tbsp
  • Vinegar 4 tbsp
  • Corn Flour 1/2 cup

For Gravy:

  • Yogurt 1 cup
  • Onion Paste 1/2 cup
  • Khoya 125 gram
  • Almond Paste 1 tbsp
  • Tomato Puree 1 tbsp
  • Coriander Powder 1 tsp
  • Fennel Powder 1 tsp
  • Red Chilli 1/2 tsp
  • Turmeric 1/2 tsp
  • Mix Spices 1/2 tsp
  • Saffron 1/2 tsp
  • Milk 2 tbsp
  • Ghee 6 tbsp
  • Salt to taste

Method:

  1. Cut flower of cauliflower.
  2. Boil 2 cups water. then add salt, turmeric & lemon and boil it.
  3. Add together cauliflower and boil half.
  4. Mix ginger, garlic, red chilli & vinegar, coat cauliflower with masala and keep for 15 minutes.
  5. Mix cumin powder & corn flour, sprinkle it on cauliflower and fry it.
  6. For Gravy:
  7. Add onion paste, tomato puree, yogurt, khoya, coriander powder, fennel powder, salt, red chilli, turmeric & mix spices in hot ghee and fry it.
  8. When masala is fried, put flowers of cauliflower & saffron soaked in milk.
  9. Garnish with coriander leaves and serve it.

Ingredients for Do Parth Paratha:

  • White flour 1 cup
  • Plain flour 1 cup
  • Salt 1 tsp
  • Ghee 2 tbsp

Method:

  1. Add salt & ghee in plain flour & white flour, mix it and knead with water.
  2. Now leave for 30 minutes.
  3. Make portions of plain flour, push it with hands, brush with ghee & sprinkle flour.
  4. Cover with other portions and roll it.
  5. Put ghee in frying pan, fry it and serve it.
