Dahi Kabab And Amritsari Fish by Chef Mehboob

Ingredients for Amritsari Fish:

  • Fish Pieces 1 kg
  • Ginger Paste 1 tbsp
  • Garlic Paste 1 tbsp
  • Carom Seeds 2 tsp
  • Red Chilli Powder 1 tbsp
  • Lemon Juice 2 tbsp
  • Egg 1
  • Yogurt 3/4 cup
  • Chickpea Flour 1 cup
  • Salt As Taste
  • Oil For Deep Fry
  • Chat Masala 2 tbsp
  • Lemon Edges 6

Method:

  1. Wash fish and cut into 1 inch pieces.
  2. Now coat fish with salt, lemon juice, ginger garlic paste & red chilli powder and leave it for 20 to 25 minutes.
  3. Make batter of chickpea flour, carom seeds, salt and water.
  4. Dip fish pieces into batter and leave for 15 minutes for marination.
  5. Heat oil in karahi pan, fry fish pieces until golden brown and crispy.
  6. Sprinkle chat masala and serve with lemon edges.

Ingredients for Dhai Kabab:

  • Yogurt 1 kg
  • Onion 1
  • Corn Flour 1 cup
  • Oil 1/2 cup
  • Coriander 1/3 cup
  • Cottage Cheese 100 gram
  • Ginger 2 tbsp
  • Cashew Nut 3 tbsp
  • Raisin 3 tbsp
  • White Pepper Powder 1/2 tsp
  • Cardamom Powder 1/2 tsp
  • Salt As Taste

Method:

  1. Hang yogurt in malmal because water comes out.
  2. Fry onion & ginger in low oil. Then add all ingredients and mix it.
  3. Now make tikya of kabab dusting with corn flour and grill on low flame.
  4. Serve with coriander leaves, onion rings and chutney.
