Mutton Karahi, Eggless Vanilla Cake And Papad Ki Sabzi by Zarnak Sidhwa

Ingredients for Mutton Karahi:

  • Mutton 1/2 kg
  • Tomatoes 1/2 kg
  • Onions sliced 2
  • Green chillies 4-5
  • Salt 1 tsp
  • Red chilli crushed 1 tsp
  • Ginger garlic paste 1 tbsp
  • Cumin powder 1/2 tsp
  • Garam masala powder 1/2 tsp
  • Black pepper powder 1/2 tsp
  • Coriander powder 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Karahi masala 2 tbsp
  • Oil 2 tbsp
  • Ginger 3-4 tbsp
  • Coriander chopped to garnish

Method:

  1. Boil mutton and keep its stock aside.
  2. grind half tomatoes with half cup of mutton stock and cook this puree with 1 tbsp oil and add karahi masala.
  3. When oil separates then keep it aside.
  4. Heat remaining oil in a pan and add sliced onions, when it turns golden color, add chopped tomatoes and when tomatoes are tender then add turmeric powder, red chilli crushed and garlic paste, cook it for 2-3 minutes.
  5. Add mutton, ginger, coriander powder, cumin powder. Now add tomato puree, green chillies, ginger, garam masala and black pepper.
  6. Add 1/2 cup water and cook, covered for 10 minutes on low flame.
  7. Garnish with coriander leaves.
  8. Serve it with naan or kulcha.

Ingredients for Eggless Vanilla Cake:

  • Flour 2-1/2 cups
  • Corn flour 1 tsp
  • Baking powder 2 tsp
  • Baking soda 1 tsp
  • Salt 1/4 tsp
  • Sugar 2 tbsp
  • Condensed milk 14 ounces
  • Water or Orange juice 1 cup
  • Vinegar 2 tbsp
  • Vanilla essence 2 tbsp
  • Melted butter 1/2 cup

Method:

  1. Sift together the flour, baking powder, baking soda and salt.
  2. Mix in the sugar.
  3. Make a well in the center of the dry and stir in the wet ingredients one by one.
  4. Stir the mixture together using the whisk.
  5. Pout the butter in a greased and lined pan and tap the pan to even it out and break the air bubbles if any.
  6. Bake it for 25 minutes at 180 degrees C.
  7. Cool on a wire rack.
  8. Freshly squeezed orange juice and grated orange zest can be used instead of water.

Ingredients for Papad Ki Sabzi:

  • Papads 2-3 medium sized
  • Curd 1 tbsp
  • Chilli powder 1/2 tsp
  • Turmeric 1/4 tsp
  • Cumin 1/4 tsp
  • Mustard seeds 1/4 tsp
  • Oil 1 tbsp
  • Chopped coriander 1 tsp
  • Salt 1/4 tsp
  • Water 1 cup

Method:

  1. Heat oil, add cumin seeds and mustard seeds.
  2. Add chilli powder, curd, turmeric, water and salt.
  3. Add papads and coriander.
  4. Boil for 3-4 minutes.
  5. Serve papad ki sabzi hot with chapati.
