Ingredients for Arhar Ki Daal With Green Mango:
Arhar 250 gram
Keri 1
Ghee 2 tbsp
Mustard 1/2 tsp
Curry leaves 10
Whole red chilli 2
Turmeric 1/2 tsp
Red chilli 1/2 tsp
Salt to taste
Sugar 1/2 tsp
Green chillies 4
Chopped ginger 1 tsp
Coriander leaves as required
Garam masala 1/2 tsp
Rice 250 gram
Method:
Soak arhar daal for 30 minutes. Then add 2 cups water, turmeric, keri pieces, salt, sugar & red chilli and boil it until daal cooked well.
Heat ghee, add mustard seed, curry leaves, whole red chilli and chopped ginger and give bhagaar.
In end, add garam masala, coriander leaves & green chillies.
Serve with boiled rice.
Ingredients for Kairi Ka Murabba:
Keri (big) 1 kg
Sugar 1 kg
Small cardamom seed 1 tbsp
Yellow color 1 pinch
Saffron 1/2 tsp
Almonds 1/2 cup
Method:
Wash keri nicely and peel it.
Then grind it, soak in water for 2 hours, take out and keep for dry.
Add 1/2 liter in sugar and make syrup. Add grinded keri and cook it.
In end, add small cardamom seed, saffron and sliced almonds and mix it.
Keep in jar.
Ingredients for Aam Panna:
Keri 3
Sugar 3/4 cup
Roasted and grinded white cumin 1 tsp
Black salt 1 tsp
Dry ginger powder 1/4 tsp
Salt to taste
Method:
Wash keri nicely and boil it until it is tender (soft).
Now take out from water, peel it and take out pulp.
Then add sugar, cumin powder, black salt, salt & dry ginger powder and mix it.
Now put in bottle and keep in refrigerator.
When u want to make it, put 2 tbsp mixture in glass and fill with cold water.
Add ice on top and serve it.
