Kairi Chicken Karela And Cheese Balls by Chef Samina

Ingredients for Kairi Chicken Kerala:

  • Chicken 750 gram
  • Karela 1/2 kg
  • Onion 250 gram
  • Keri 2
  • Salt to taste
  • Red chilli powder 1 tbsp
  • Turmeric 1/2 tsp
  • Tomato 250 gram
  • Nigella seed 1 tsp
  • Fennel seed 1 tbsp
  • Mint 1/2 bunch
  • Green chilli 8-10
  • Oil 1 cup
  • White cumin 1 tsp
  • Ginger garlic paste 1 tbsp
  • Chopped ginger 1 tbsp
  • All spice powder 1 tsp

Method:

  1. Heat oil, fry onion, add chicken, ginger garlic paste, salt, chillies, turmeric and tomatoes and roast it.
  2. Together add 1 cup water and cook it.
  3. Peel karela, add salt and wash it and fry in oil.
  4. Cut keri into thin pieces.
  5. Now add all spice powder, fennel seed, nigella seed, white cumin, green chilli, keri and karela in roasted chicken and leave for simmer.
  6. In end, add mint and chopped garlic.
  7. Serve hot keri chicken karela.

Ingredients for Cheese Balls:

  • Maggi Noodles (Chicken) 6 packet
  • Potato 1/2 kg
  • Cottage cheese 1 cup
  • Coriander 1 cup
  • Salt 1/2 tsp
  • Red chilli powder 1 tsp
  • Crushed red chilli 2 tsp
  • Eggs 3
  • Oil 2 cup

Method:

  1. Boil maggi noodles in 6 cup water for 6 to 8 minutes and strain it.
  2. Add boiled potato, coriander, red chilli and crushed red chilli and mix with hands.
  3. Now make 15 balls of mixture, put 1 to 2 pieces of cheese in every kabab and make shape of circle.
  4. Coat maggi cheese balls with egg and fry in oil.
  5. Serve with hot chilli dip.
