Bariyan, Bariyan Dopiaza And Aam Ka Panna by Saadat Siddiqui

Ingredients for Bariyan:

  • Dal moong 2 cup
  • Ginger paste 1 tbsp
  • Garlic paste 1 tbsp
  • Green chillies 2-3
  • Cumin 1 tbsp
  • Nigella seed 1/2 tsp
  • Coriander powder 1/4 tsp
  • Mix spice powder 1/2 tsp

Method:

  • Add green chillies and ginger garlic paste in soaked dal moong and grind thin.
  • Now add cumin, nigella seed, coriander powder and mix spice powder.
  • Make balls and dry it in sunlight.

Ingredients for Bariyan Dopiaza:

  • Oil 1/2 cup
  • Onion 1 kg
  • Coriander 1 tsp
  • Bariyan 15
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • Crushed red chilli 1 tbsp
  • Tomato 3
  • Water 1 cup
  • Green chill for garnish
  • Fresh coriander for garnish

Method:

  1. Heat oil in one pan, fry onion until soft.
  2. Now add coriander, cumin and pieces of bariyan.
  3. Now cook for 30 seconds.
  4. Now add ginger garlic paste, crushed red chilli, salt, tomato and water and cook on low flame for 25 to 30 minutes.
  5. When bariyan becomes soft, cook on high flame until onion becomes brown and oil comes on top.
  6. Garnish with coriander and mint and serve it.

Ingredients for Aam Ka Panna:

  • Keri 3-4
  • Water 2-3 cup
  • Fresh coriander 1/4 cup
  • Mint 2 tbsp
  • Black salt 1 tsp
  • Cumin 1 tsp
  • Sugar 1 tbsp

Method:

  1. Boil keri.
  2. Take out water from it and separate pulp.
  3. Make paste of mint, coriander and some water in blender.
  4. Add keri pulp, coriander, mint paste, black salt, cumin, sugar and water and mix nicely.
  5. Add ice and serve chill.
