Kairi Qeema, Guramba And Keri Ki Chutney by Sara Riaz

Ingredients for Kairi Qeema:

  • Mince 1/2 kg
  • Onion 2
  • Keri 2
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Salt to taste
  • Crushed red chilli 1 tsp
  • Red chilli powder 1 tsp
  • Turmeric 1/2 tsp
  • Coriander 1 tsp
  • Garam masala 1 tsp
  • Nigella seed 1/2 tsp
  • Coriander leaves as required
  • Green chillies 4-6

Method:

  1. Add slice onion, mince, ginger, garlic, salt, red chilli powder, crushed red chilli, turmeric and coriander in hot oil, mix it and cook it.
  2. When water of mince dries, roast it. Then add keri pieces, slice onion, garam masala and nigella seed, mix it and simmer on low flame.
  3. Lastly, add coriander leaves and green chillies
  4. Serve with hot naan.

Ingredients for Guramba:

  • Sugar 1 cup
  • Sooji 3 tbsp
  • Ghee 3 tbsp
  • Green cardamom 4
  • Clove 4
  • Keri 2

Method:

  1. Peel keri and cut into slices.
  2. Hot fry slices in hot ghee.
  3. Now add clove & green cardamom in this ghee and roast sooji.
  4. Then add sugar and 2 cup water and cook like thin halwa.
  5. Add fried keri before 5 minutes removing from stove.
  6. Guramba is ready.

Ingredients for Keri Ki Chutney:

  • Keri 2
  • Mint 1 cup
  • Green chillies 8-10
  • Salt 1/2 tsp
  • Sugar 1 tsp

Method:

  1. Peel keri.
  2. Now add mint, green chillies, salt and sugar in it and grind nicely.
  3. Keri ki chutney is ready.
