Ingredients for Chanay Ki Daal Keri Kalonji:
Chana dal 250 gram
Onion 2
Ginger 1/2 tsp
Garlic 1/2 tsp
Nigella seed 1 tsp
Keri 1
Salt to taste
Red chilli 1 tsp
Turmeric 1/2 tsp
Garam masala 1 tsp
Green chilli 4-5
Coriander leaves as required
Method:
Boil dal for 30 minutes and boil it.
Heat oil and fry onion. Then add ginger, garlic, red chilli, salt, turmeric and nigella seed and roast it.
Now add boiled dal in it. Together peel keri, cut into pieces and add in it.
Lastly, add garam masala powder, chopped coriander leaves & green chillies and simmer it.
When ready, serve hot.
Ingredients for Mango Nauratan Chutney:
Mango 1 kg
Dry dates 10-12
Ginger 2 inch piece
Sugar 1 kg
Salt 1 tsp
Raisin 4 tbsp
Melon seeds 2 tbsp
Almond 100 gram
Crushed red chilli 1 tsp
Nigella seed 1 tsp
Method:
Cook water & sugar and make syrup.
Now add long chopped dry dates, ginger and crushed keri and cook it.
Then add salt, crushed red chilli & nigella seed and cook it until little thick.
Lastly, add almond, raisin & melon seeds and remove from stove.
Keep in sterilize bottle and use it.
Ingredients for Achari Keri Ka Paratha:
White flour 2 cup
Oil 2 tbsp
Salt to taste
For Achar:
Keri 2
Salt to taste
Turmeric 1/2 tsp
Red chilli 1/2 tsp
Nigella seed 1/2 tsp
Fennel seed 2 tsp
Coriander 1 tsp
White cumin 1 tsp
Method:
Add oil and salt in white flour, knead it and leave for 30 minutes.
Peel keri and crush it.
Now little crush all ingredients and mix in keri.
Make portions of flour.
Spread achar on top, cover with other rolled portion and fry on ghee on tawa.
Achari keri ka paratha is ready.
