Saffron Pulao With Mango, Keri Dopiaza And Keri Ka Kharcha Achar by Sara Riaz

Ingredients for Saffron Pulao With Mango:

  • Rice 1/2 kg
  • Keri 1
  • Saffron 1/2 tsp
  • Ghee 1/2 cup
  • Whole mix spice 1 tbsp
  • Black cumin 1 tsp
  • Onion 2
  • Tomato 3
  • Brown onion 1
  • Green chilli 4
  • Coriander leaves as required
  • Yellow color 1 pinch
  • Corn 1/2 cup

Method:

  1. Heat ghee and add whole mix spice and black cumin.
  2. Then add chopped onion, tomato, salt and corn flour and fry it.
  3. Now add soak rice, fry little, add water and cook it.
  4. When rice cooked well, simmer it on low flame.
  5. Lastly, add yellow color and saffron.
  6. Sprinkle brown onion and coriander leaves on top.
  7. Serve hot.

Ingredients for Keri Dopiaza:

  • Mutton 1/2 kg
  • Onion 1/2 kg
  • Keri 1/2 kg
  • Ginger 1/2 tsp
  • Garlic 1/2 tsp
  • Salt to taste
  • Red chilli 1 tsp
  • Turmeric 1 tsp
  • Garam masala 1 tsp
  • Coriander leaves as required
  • Green chillies 10-12
  • Kulchay 4

Method:

  1. Add ginger, garlic, salt, red chilli & turmeric in mutton and boil it.
  2. Heat oil in one pan and fry onion.
  3. Take out half fried onion, then add boiled mutton and roast it.
  4. When roast, add keri pieces, remaining fried onion, green chilli, coriander leaves & garam masala and leave for simmer.
  5. Serve with kulchay and naan.

Ingredients for Keri Ka Kharcha Achar:

  • Keri 2
  • Salt to taste
  • Turmeric 1/2 tsp
  • Red chilli 1/2 tsp
  • Mustard oil 1/2 cup
  • Nigella seed 1/2 tsp
  • Crushed garlic 2 tbsp

Method:

  1. Peel keri and crushed it. Then coat with salt & turmeric and keep it for few minutes.
  2. Now add red chilli, oil, nigella seed & crushed garlic and mix it nicely.
  3. Keep in jar and use it.
