Rice Balls

Ingredients:
- 3 Cups Hot Cooked Rice
- 1 Cup Mozzarella Cheese, Shredded
- 2 Eggs
- Dash Of Salt
- Dash Of Freshly Ground Pepper
- 1/4 Teaspoon Garlic Powder
- 1/2 Cup Bread Crumbs
- 1/2 Cup Parmesan Cheese, Shredded
Method:
- Preheat oven to 425 degrees
- Combine garlic powder, rice, mozzarella cheese, eggs, salt and pepper in a bowl and mix well.
- Let it set for 15 minutes at room temp to get a forming consistency.
- Then with fingertips, make 1-2 inch balls out of the mixture.
- Mix bread crumbs with Parmesan cheese in a shallow dish roll the rice balls in mixture, coat evenly.
- Place the rice balls on cookie sheet and bake for 17-20 minutes.
- Serve.
Rice Balls appetizer goes nicely with a plate of fresh sautéed vegetables
