Achari Mutton And Lauki Ka Halwa by Sara Riaz

Ingredients for Lauki Ka Halwa:

  • Bottle Gourd 2 kg
  • Sugar 1/2 kg
  • Kewra 1 tsp
  • Silver paper as required
  • Chopped almonds 1/2 cup
  • Small cardamom 7-8
  • Khoya 250 gram
  • Green color 1 pinch
  • Butter 2 ounce

Method:

  1. Peel bitter gourd and crush it.
  2. Add bitter gourd and green color in boiled water, boil for 5 minutes and strain it.
  3. Add 1/2 cup water in sugar and make syrup.
  4. Together add cardamom.
  5. Now mix bitter gourd and sugar nicely. Then add khoya and cook on low flame.
  6. Lastly, add butter, kewra and almonds.
  7. Take out in serving dish. Decorate with silver paper and serve.

Ingredients for Achari Mutton:

  • Mutton boneless 1 kg
  • Onion 3
  • Yogurt 1 cup
  • Tomato paste 1/2 cup
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Salt 1-1/2 tsp
  • Mustard 1 tsp
  • Fennel seed 1 tbsp
  • Nigella seed (Onion seed) 1 tsp
  • Turmeric 1/2 tsp
  • White cumin 1 tsp
  • Ginger 2 inch piece
  • Green chillies 4
  • Coriander leaves as required
  • Tandoori naan 4

Method:

  1. Fry onion in hot oil, add ginger, garlic & mutton and roast it.
  2. Now add salt, red chilli, turmeric and whole white cumin.
  3. When mutton cooked well, add wiped yogurt and roast it.
  4. Together add tomato paste, cover it and leave mutton for cook.
  5. Then crush mustard & fennel seed thick thick. Then add onion seed.
  6. Add green chillies, coriander leaves & ginger and serve it.
