Ingredients for Dry Coconut Stuffed Baingan:
Egg Plant 5
Dry Coconut Slice 1/2 cup
Red Chillies 4-6
Turmeric Powder 1/4 tsp
Garlic 6-8 cloves
Spring Onion 1
Salt To Taste
Oil For Fry
Method:
Wash spring onion and cut into slices.
Peel garlic and cut into slices.
Wash egg plant, make cut in length. Then soak in salt water.
Heat oil in one karahi pan, dry egg plant and deep fry for 20 to 30 seconds until little soft.
Heat 1 tsp oil in one pan, fry dry coconut slice, red chilli & garlic on low flame until light brown.
Then cool it and grind with turmeric and salt in grinder.
Now stuff 1 tsp masala paste in egg plant.
Heat 1/2 tsp oil in separate pan, put sliced green chillies & stuffed egg plant. Then cover it and cook for approx 2 minutes.
Remove cover and cook more for 1 minute.
When ready, serve hot with steam rice.
Ingredients for Hara Kabab:
Cottage Cheese 1 cup
Spinach 4 cup
Water 2 cup
Bread Slice 2
Green Chilli Paste 1 tsp
Ginger Paste 1/2 tsp
Garlic Paste 1 tsp
Oil 2 tbsp
Salt To Taste
Method:
Wash spinach leaves and boil in 2 cup water for 5 minutes.
Now put in cold water, wring it nicely after 5 minutes and take out.
Soak bread slice in water for 4 to 5 minutes, wring it and mesh it.
Put spinach, cheese, bread slice, green chilli paste, ginger paste & salt in one pot, mix it nicely and make paste.
Now keep for 30 to 40 minutes. Then divide mixture into 12 portions, put little oil in hand and make kabab.
Heat oil in one frying pan and deep fry 2 to 3 kabab together.
Take out when golden brown and serve hot.
