Ingredients for Pound Cake:
2 egg whites
1 egg yolk
1-3/4 cups flour
1 tbsp baking powder
1/2 tsp baking soda
2/3 cup milk
1 tbsp vanilla essence
3/4 cup butter
1/2 cup sugar
1/2 cup caster sugar
1/4 brown sugar
Method:
Preheat oven to 180 degrees.
Grease and flour two 8x4 inch loaf pans.
Sift together the flour, baking powder and baking soda, set aside.
In a medium bowl, cream together the butter, white sugar, icing sugar and brown sugar until smooth.
Add egg whites and egg yolks, beating after each addition.
Stir in the vanilla.
Stir in the dry ingredients alternately with the milk.
Divide the batter evenly between the two pans.
Bake for 60 to 70 minutes in the preheated oven, until a toothpick inserted in the center of the cake comes out clean.
Cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
Ingredients for Potato & Sausage Salad:
1/2 kg potatoes
2 sausages sliced
1/3 cup olive oil
3 cloves garlic, minced
1 large onion, chopped
1/4 cup fresh parsley, chopped
3 stalks celery, finely chopped
1 large capsicum, chopped
1/2 tsp mustard
1 cup chickpeas
Salt and black pepper to taste
1/4 tsp dry oregano
1/4 tsp dry basil
Method:
Boiled the potatoes.
In a bowl add potatoes, sausages and all ingredients and mix well.
Ingredients for Cheese Garlic Bread:
1/2 cup butter
1-1/2 tbsp garlic powder
1 tbsp dried parsley
1 loaf italian bread
8 ounce grated mozzarella cheese
Method:
Preheat over to 3500 degrees F (175 degrees C).
In a small sauce pan over medium heat, melt butter and mix with garlic powder and dried parsley.
Place italian bread on a medium baking sheet.
Using a basting brush, brush generously with butter mixture.
Bake in preheated oven approx 10 minutes, until lightly toasted.
Remove from heat.
Sprinkle with mozzarella cheese and any remaining butter mixture.
Return to oven approx 5 minutes or until cheese is melted and bread is lightly browned.
Ingredients for Mac & Cheese:
8 ounces elbow macaroni
2 cups grated cheddar cheese
1/2 cup grated parmesan cheese
3 cups milk
1/4 cup butter
2-1/2 tbsp flour
2 tbsp butter
1/2 cup bread crumbs
1 pinch paprika
Method:
Boil macaroni according to the package direction.
Drain, in a sauce pan, melt butter over medium heat.
Stir in enough flour to make a roux.
Add milk to roux slowly, stirring continuously.
Stir in cheese and cook over low heat until cheese is melted and the sauce is a little thick.
Put macaroni in large dish and pour sauce over macaroni.
Melt in a pan over medium heat.
Add bread crumbs and brown.
Spread over the macaroni and cheese to cover.
Sprinkle with a little paprika.
Bake at 180 degrees for 30 minutes.
Serve.
