Mahi Kaliyan, Luqmi And Vermicelli Ka Muzafir by Sara Riaz

Ingredients for Mahi Kaliyan:

  • Mutton 1/2 kg
  • Onion 1
  • Desiccated Coconut 3 tbsp
  • Peanuts 15
  • Coriander Seeds 1 tsp
  • Cumin Seeds 1 tsp
  • Almonds 20
  • Curry Leaves 10-12
  • Onion Seeds 1 tsp
  • Whole Cumin Seeds 1 tsp
  • Garlic 1 tsp
  • Ginger 1 tsp
  • Salt to taste
  • Red Chilli 1 tsp
  • Turmeric Powder 1/2 tsp
  • Tamarind Pulp 2 tbsp
  • Coriander as required
  • Green Chilli 2-3
  • Naan 4

Method:

  1. Roast coconut, coriander, cumin, peanuts & almonds and grind it.
  2. Heat oil and do bhagaar of curry leaves & onion seeds.
  3. Then add, whole cumin seeds, chopped onion, ginger, garlic, salt, red chilli, turmeric & mutton and roast masala.
  4. When mutton half cooked, add roast garam masala.
  5. Together add tamarind pulp and simmer it on low flame.
  6. Lastly, add green chilli and coriander.
  7. Serve hot.

Ingredients for Luqmi:

  • Mince 1/2 kg
  • Onion 1
  • Ginger 1 tsp
  • Garlic 1 tsp
  • All Spices Powder 1/2 tsp
  • Turmeric Powder 1/2 tsp
  • Salt to taste
  • Red Chilli 1 tsp
  • Coriander 2 tbsp
  • Green Chillies 4

For Dough:

  • Flour 1/2 kg
  • Eggs 2
  • Ghee 4 tbsp
  • Salt 1 tsp
  • Caster Sugar 1 tsp
  • Water for knead

Method:

  1. Add ghee, egg, salt, & caster sugar in flour and knead with flour.
  2. Then leave for 30 minutes.
  3. For Filling: Heat oil, add chopped onion, ginger, garlic, salt, red chilli, turmeric & mince and cook on low flame.
  4. When mince cooked well, add all spices powder, coriander & green chillies and roast it.
  5. Now make portions of flour, roll big. Keep roasted mince on top.
  6. Noe fold it, cut in shape of luqmi and deep fry it.
  7. Serve hot.

Ingredients for Vermicelli Ka Muzafir:

  • Vermicelli 1 packet
  • Butter 200 gram
  • Powder Milk 4 cup
  • Water 3 cup
  • Lemon 2
  • Saffron 1/2 tsp
  • Cardamom 10
  • Sugar 3 cup
  • Water 1-1/2 cup
  • Almond, Pistachio 1/2 cup

Method:

  1. Heat butter and add cardamom. Then add vermicelli and roast it.
  2. Make syrup of sugar and water. When vermicelli is roasted, add syrup.
  3. After it, cook on high flame until water dries.
  4. Dissolve powder milk in 3 cup water. Then add milk and wring 1 lemon.
  5. Together stir continuously. When water dries, cover it and leave for simmer.
  6. Add almonds, pistachio & saffron and serve it.
