Aaloo Dossa by Chef Zakir

Ingredients:

  • Basmati rice 100 gram
  • Red lentils 100 gram
  • Salt to taste
  • Ghee 2-3tbsp

For Stuffing:

  • Potatoes boiled 2
  • Onion seeds 1/2 tsp
  • Mustard seeds 1/2 tsp
  • Crushed red pepper 1 tbsp
  • Fresh coconut 50 gram
  • Coriander leaves 1 tbsp
  • Green chillies chopped 2
  • Water as required

Method:

  1. Firstly, wash rice & red lentils and soak for 1 hour. Throw water of both things, first add rice & 6 tbsp or 90 ml water in blender, grind it and take out in one bowl.
  2. Now grind red lentils like this, add in rice paste, put salt on top and mix nicely.
  3. Now keep in cloth and keep on room temperature or for 12 hours over night.
  4. Now again mix this mixture nicely.
  5. Now grease pan with some oil. Now put some mixture in the center of pan, spread with spoon and cook for 3 to 4 minutes. When cooked, keep aaloo stuffing in center and roll it. Spicy aaloo doosa is ready.
  6. For filling: Make paste of coconut and 1/4 cup of water in blender.
  7. Now in one karahi, add boiled potato, onion seeds, mustard seeds, crushed red chilli, fresh coconut, chopped coriander & green chilli and mix it for 2 to 3 minutes.
  8. Then add small small boiled potatoes. Together add 1/4 cup water, mix it for 4 to 5 minutes on high flame. Remember, stuffing should not be very thick and very thin.
