One Pan Roast Chicken & Veggie And Sweet Daal Dumpling by Chef Mehboob

Ingredients for One Pan Roast Chicken & Veggie:

  • Potatoes 08
  • Chicken Thai (Boneless) 04
  • Carrot 02
  • Zucchini 02                          
  • Leek 01
  • Chicken stock 1/2 cup
  • Oil 2 tsp
  • White pepper 1/2 tsp
  • Red chili powder 1/2 tsp
  • Parsley 1 tbsp
  • Rosemary Thyme 1 tsp
  • Salt to taste

Method:

  1. Heat oven at 200 degree centigrade. In one roasting tray add potato,  carrot, zucchini, leek, salt, white pepper, red chili powder and thyme, rosemary with oil and mix all together.
  2. After this spread vegetables and roast for 30 minutes when vegetables starts taking brown color take out from the oven.
  3. Then add chicken with vegetables and chicken and then cook in oven for 15 minutes. At last add chicken stock and cook 5minutes more.
  4. Ready to serve

Ingredients for Sweet Daal Dumpling:

  • Red Lentil 1/2 cup
  • Chickpeas Lentil 1/2 cup
  • Crushed coconut 1/2 cup
  • Cumin powder 1/2 tsp
  • Hing powder 1/4 tsp
  • Ginger 1 tbsp
  • Coriander 1 tbsp
  • Sugar 1 tsp
  • Salt to taste
  • Curry leaf few
  • Onion 01
  • Green chili 03

Method:

  1. Firstly keep red Lentil and chickpeas Lentil dipped in water for about 3-4 hours.
  2. Take out of water by staining
  3. In a grinder add lentils, crushed coconut, green chili, cumin powder, curry leave and grind.
  4. Do not add water while grinding and do not grind so much that all ingredient forms into paste.
  5. Then mix with salt, sugar and chopped coriander.
  6. With the prepared mixture make ball shapes about the size of a lemon.
  7. Keep all ball in a steel container.
  8. And steam for about 12-15 minutes.
  9. Pressure cooker also can be used for steaming purpose.
  10. Ready to serve.
