Bahar-e-sabz, Badam Kheer And Kesari Kulcha by Sara Riaz

Ingredients for Bahar-e-sabz:

  • Potato 1/2 kg
  • Cauliflower 1
  • Carrot 1
  • Capsicum 2
  • Green peas 1/2 kg
  • Onion 1
  • Green chilli 4-6
  • Ginger 1
  • Tomato 2
  • Red chilli powder 1 tsp
  • Salt to taste
  • Mix spices 1 tsp
  • Turmeric powder 1/2 tsp
  • Coriander as required
  • Roasted crushed cumin 1 tbsp
  • Garlic 1 tbsp

Method:

  1. Heat oil and fry onion slice & ginger.
  2. Then add garlic, salt, red chilli, turmeric, cumin & tomato and roast masala.
  3. Now add, cauliflower, carrot, capsicum, peas & potato and fry it. Then add 1/2 cup water and leave for cooked.
  4. When vegetables are ready, add coriander & green chillies and serve it.

Ingredients for Badam Kheer:

  • Milk 2 kg
  • Rice 125 gram
  • Rose water 1 tsp
  • Sugar 1-1/2 cup
  • Almond powder 1/2 cup
  • Almond sliced 2 tbsp
  • Silver paper for garnish

Method:

  1. Soak rice for few minutes ,crush with hands, add rice in milk and cook.
  2. When rice cooked well, add sugar & almond paste and cook it until kheer becomes thick.
  3. Now add rose water and take out in dish.
  4. Garnish with almonds sliced & silver paper and serve it.

Ingredients for Kesari Kulcha:

  • Flour 250 gram
  • Yeast 1 tsp
  • Caster sugar 1 tsp
  • Saffron 1/4 tsp
  • Kewra 1 tsp
  • Yogurt 1/4 cup
  • Salt 1/2 tsp
  • Ghee 2 tbsp

Method:

  1. Add flour, yeast, caster sugar, saffron, kewra, salt, yogurt & ghee and knead flour with lukewarm water.
  2. Then leave for 30 minutes.
  3. Now make balls, roll like puri and fry it.
  4. Kesari kulcha is ready.
